Following graduation Jenkins served in the Army in World War II and then played professional football following the service until an injury cut his career short.

Jenkins would later make his mark in coaching, first at Ludlow High School before moving to Westfield High School, where he served as athletic director and assistant principal. He coached football, baseball, basketball and golf. A solid golfer, he once finished second in New England in a southpaw golf tournament and later returned to AIC to coach the golf team for several seasons.
